Simple Vegan Carrot Tacos

Yields: 2 tacos
Ingredients
- 4 corn tortillas
- 4 large carrots, chopped
- salsa
- vegan cheese
- vegan butter
- cilantro
- crushed pepper
- nutritional yeast
- garlic powder
Instructions
- Peel and chop the carrots.
- Add chopped carrots to a pan with 1 tbs vegan butter (I use Earth Balance). Saute over medium heat.
- Stir occasionally. Add crushed pepper, garlic powder, and nutritional yeast flakes to taste. When the carrots are soft (about 7-10 min.), remove them from the pan and place in a bowl.
- Use the same pan to heat your tortillas (just cook each tortilla for about 30 seconds per side). While on the pan, add some vegan cheese to tortilla, until it is melted.
- Add the sauteed carrots to your tortilla. Then add a spoonful of salsa and a pinch of fresh cilantro.
